The recipe that we offer you today is an original idea for preparing delicious Christmas cookies with almonds. These almond sweets are very simple to prepare, so simple that you can have fun making them even with the help of your children! To make these cookis not only tasty but also beautiful, you can decorate them with a white frosting, but nothing stops us from using a colored one.

For 40 cookies
- Flour 00 300 g
- Almond flour 120 g
- Butter 180 g
- Egg yolks 2
- Vanilla bean 1
For the frosting
- Egg whites 1
- Powdered sugar 120 g
1. To prepare christmas almond cookies start by placing the flour 00, the almond flour, the granulated sugar, the seeds of the vanilla bean, the egg yolks and the soft butter into cubes in a large bowl. Stir with hands all the ingredients.
2. Move the compound onto a lightly floured surface and continue to knead until obtaining a well blended loaf. Wrap the dough in a platic wrap and put in a fridge to rest for at least an hour.
3. After the indicated time, sprinkle a pinch of flour on a worktop and roll out the dough with a rolling pin until obtaining a 0.5 cm thick sheet and, by using some Christmas moulds, get 40 cookies. Place them on a baking tray covered with baking paper and cook them in a preheated static oven at 180° for about 6 minutes (the surface must remain clear and not brown).
4. Take them out of the oven and let them cool well. In the meantime prepare the frosting: start beating the egg whites until stiff and slowly mix the frosting until obtaining a thick and foamy mixture, then transfer into a sac-à-poche with a fine and smooth nozzle. Decorate each cookie at your taste and let them rest for about a 5 minutes until the frosting cools down.
